“Steamed” Kale Recipe

I enjoy this raw kale recipe every time my Grandmother makes it!  Brings to mind cool fall evenings when I was much younger, and warm steamed greens served during family meals. It’s amazing how food can be attached to so many memories.
Anyway, these raw greens have a delicious, salted butter flavor and great texture, that makes them a very tasty (and healthy) addition to any raw dinner! I also really enjoy this raw kale recipe as a mid-day snack with some cheese and fresh fruit.
I often forget about the many advantages that green, leafy veggies offer. I’m always needing more greens in my diet, and raw kale is one of the most nutritionally rich veggies around.

So if there’s a vegetable we’re going to overlook… it probably shouldn’t be kale. 🙂

Studies have shown that raw kale contains some potent phytochemicals, which may encourage the body to fight against cancer. Raw Kale is a good source of very important vitamins – vitamin A, C, and K. It’s also a very good source of the B vitamins and vitamin E.  Vitamins C and E are good antioxidants, while vitamin K may encourage bone and heart health. Vitamin A can help to maintain good vision. Raw kale is also a good source of the three important minerals that are needed for blood pressure control, calcium, magnesium, and potassium. 

“Steamed” Kale Recipe

3 large bunches of raw kale
1/3 cup olive oil
1 1/2 tsp salt
1 1/2 TBS onion powder (optional)


Wash kale and drain. Pull leafy part from stem and break into bite size pieces. Place in large bowl.

Drizzle olive oil over kale and mix with a large serving spoon until all leaves are well coated.

Sprinkle salt over kale and stir mix until evenly distributed.

Do the same with the onion powder.

You can eat it at any time, but the longer it sits, the softer it gets, giving more of a “steamed” affect.
