Raw Dinners

This easy lasagna is one of the tastiest recipes ever!!! Served warm or chilled, it’s going to be a favorite of mine for many meals to come.
If have one weak spot when it comes to food, it’s lasagna. So I’m not exactly sure why it took me so long to try creating a raw version… But I guess it’s “better late on a plate, than never!”

Zucchini (also known as courgette) is a handy vegetable because it’s available year round, and it’s benefits in a raw kitchen are numerous. They contain vitamin C, potassium, and vitamin A, which are all very important for good health. Regularly adding zucchini to meals may help with weight loss because of the low calorie content.

~ Easy Lasagna ~

“Raw Pasta”
1 large zucchini peeled
1 1/2 tsp olive oil
pinch of salt

Cut zucchini in half (or into 3 inch sections). Slice thinly into 3 inch strips (a mandolin or vegetable peeler works good). Let sit in a bowl for a 1/2 hour to drain. When you see the water collecting in the bottom, strain zucchini completely. Toss with olive oil and salt.

Okay! Now, you can either make a big dish of this, or make little individuals. Tastes great either way!

For individuals, lay 3 or4 slices of drained and prepared zucchini on a small plate. Spoon desired amount of “Ricotta” over it, and then add a thin layer of “tomato sauce”.  Repeat layering process 2 more times (or more) and do a layer of zucchini last.

For big dish, do the same, but cover the bottom of a small baking dish with zucchini and then layer with cheese and sauce just like the smaller ones.

Top with a little bit of shredded raw cow milk cheese if desired.

Dehydrate for 1 1/2 – 2 hours. Or place in oven at lowest temp (no higher than 105) until warm. Serve warm or chilled.  ENJOY!
