Creamy Raw Salad Dressing!

I am crazy about this superb raw salad dressing!! It is a simple recipe, but it sticks to your salad and adds the perfect flavor. Just so you know,  I’m not one of those lovable people who eats avocado straight out of the peeling with a spoon (like my Mom does!)… but I love it in this dressing and have not grown tired of it even after months of making it!

Sometimes I switch stuff around in the recipe – adding extra lemon juice or lots of pepper and maybe a few pieces of diced up tomato fresh onion- fora  delicious, “chunkier” version….. So go for it and try your own variations too!

A ripe avocado has pale golden flesh, a light sweet, nutty flavor and a buttery texture that goes great with so many foods. When choosing avocados, look for ones with extremely dark green skin (almost black). Be sure they’re un-bruised and un-scarred if possible. Give each one a VERY light squeeze to feel if it’s medium firm with no “mushy” places.


Here’s some of the goodness that comes from raw, organic avocados:

  • They have a high protein content which makes them a great for folks who don’t eat much meat!
  • They have one of the highest fiber contents of any fruit or vegetable!
  • They are loaded with vitamins A, C, and E (among others)! 

Creamy Avocado (Raw) Salad Dressing

2  organic avocados

2 tsp. raw lemon juice

2 tblsp. olive oil

1/2 tsp. onion powder

1/4 tsp. sea salt

garlic powder &   pepper

After quartering and peeling, puree both avocados.  Add lemon juice and spices. Add pepper and Garlic to taste. Blend well. Note: This dressing will naturally darken in color as it sits, so serve promptly- or cover and refrigerate for no more than 1/2 an hour before serving if the color matters to you . Enjoy!!!

(Avocados are also delicious sliced and served with ripe tomato on leafy green salads.)
